Mrs Crow's Lammas Cornbread Recipe:
Ingredients:
2 boxes Jiffy® corn muffin mix
2 eggs
1/2 cup milk
1 can whole corn (drained)
1 cup shredded cheese
3/4 cup Hatch® green chilis (optional)
1/4 cup honey
1/2 stick butter
Combine first six ingredients in a bowl. Divide mixed batter evenly into a greased muffin baking pan or square baking pan.
Bake at 400 F for 20-25 minutes. Check for doneness with a toothpick; if it comes out clean, they're done. While that is baking, melt butter and honey in a separate pan on low; stir until combined.
When the muffins are done, remove from oven and top with honey and melted butter mixture.
